Something yummy this way comes...
Last night I was looking for something fast, healthy, and flavorful. I think pretty happy with the results of trying this Sweet Orange Salmon from Cooking Light. It really only required buying the fish & an orange since I had all the spices. It took longer to cook than the recipe said...I broiled for 11 minutes, then switched to bake (at 425, & moved the pan to the middle rack) for about another 3-4 minutes so that the exterior wouldn't get burned all to hell. My guess is that perhaps the salmon was thicker than the recipe intended, but I'm not totally sure.
On the plus side, the fish didn't burst into flames which is my general fear about using the broiler. Bonus!
